Cajun stuffed chicken

Cajun stuffed chicken


This dish is packed with awesome flavor and is easy too!

Ingredients:

4 chicken breasts
1/2 Cup of shredded jack cheese
1/2 Cup of sharp cheddar cheese
1 Cup of spinach

1 egg
Cajun seasoning (I eyeball to my taste)
panko crumbs

lots of toothpicks!


1. preheat oven to 350 degrees.

2. Prepare chicken breast by flattening them to a 1/4 inch. ( I use a ziplock bag and a mallet) set aside.

3. In a bowl combine jack cheese and spinach. In a smaller bowl combine bread crumbs and Cajun seasoning.

4. Spoon spinach and cheese mixture onto one side of each chicken breast. fold each chicken breast tightly and fasten with several toothpicks. 

5. Bake 35 minuets or until chicken is done. I serve with a side of yellow rice!

20 Dollar Laundry Room Re-do

BUDGET DIVA






I have a small laundry closet next to my kitchen. There are no doors just curtains and it was driving me CRAZY how bad it looked! 


Yes...I know... its terrible. BUT it was a perfect excuse to hit up the Goodwill! :) 

At the Goodwill I found:

 1 large ivory canister $4.98
1 medium ivory canister $3.98
1 ivory drink dispenser $2.98
1 vintage candle holder $1.98
1 mason jar $1.00
1 Table cloth $2.50
1 wire plant basket $1.00
1 basket $1.00
1 sheet sticker letters $.50
= $19.92



Now for label making! REMEMBER...before you GO OUT and spend MONEY on labeling items, just look around your house! You can make your own labels for free 99 percent of the time. 


I found two different kinds of paper and printed out the labels in a font i liked. then glued everything together. I also had cute little cloths pins to attach the green ribbon too. 


For the toilet paper holder I spray painted the black plant holder the color I wanted.  Also use my letter stickers I got for .50 to add the word "coins" to my 2 dollar vintage candle holder for all that loose change you find in the dryer!




I used the 1.00 mason chair to store cloths pins and used the stickers to write the words "cloths pins" on it. 


Added my 2.50 table cloth to cover the ugly wired shelf and used all three canisters for 11.00 to store all my  laundry needs.

Easy Jalapeno Cheddar Sausage and Peppers

Hey guys! Do you ever have those days when you just don't have time to cook a yummy meal but want the taste of one? This is the easiest, fastest, recipe! Enjoy :)



Easy Jalapeno Cheddar Sausage and Peppers

1 package of  JOHNSONVILLE JALAPEÑO & CHEESE SMOKED SAUSAGE
1 Large onion sliced into strips
2 green peppers sliced into strips
1 red pepper sliced strips
olive oil, salt, pepper, garlic


1. SLICE ALL PEPPERS AND ONION. PLACE IN A STOVE TOP PAN AND DRIBBLE OLIVE OIL ON THEM. TOP WITH DESIRE AMOUNT OF SALT, PEPPER, AND GARLIC. TURN ON MEDIUM HEAT AND SAUTE.

2. Preheat gas grill to medium-low heat. place links on grill about 7-9 inches above the heat source cook for 7-10 minutes. (i like my pretty charcoaled) Turn links frequently, if possible use tongs rather than a fork to prevent casings from puncturing. 

3. Add sausage to peppers in pan and serve warm.
